shrimp for supper

the final dish

and the fresh linguini

I love seafood and love to make anything with anything fishy but shrimp is tough for me, I don’t make it a lot, my husband is not a fan I must say unless it’s freshly caught and grilled! But this is a simple dish anyone can pull off and quite tasty

Dozen cleaned Shrimp (30 count)
Half a can of pureed San Marzano tomatoes
4 cloves garlic chopped
1 tbsp hot pepper flakes
3 anchovy filets packed in olive oil
1 cup frozen green peas
1 pound fresh linguini
Grated parmesan cheese

Start heating the water for the fresh pasta. Saute the shrimp in olive oil batches, so it doesn’t get steamed instead of flash fried. Take out and put on a plate.
In the pan place garlic, anchovy and hot pepper flakes, saute for 2 minutes and add tomato sauce. After 2 minutes, on medium high heat add the shrimp and the peas.
Heat up to boiling point and immediately turn off the stove. Add a handful of chopped parsley and flavor with salt and pepper.
Boil pasta for 4 minutes until al dente and toss with the fresh sauce in a large bowl.
Serve immediately, optional is the parmesan on top!
